During these two to three hour sessions, participants will gather around our cutting blocks to watch a detailed demonstration and discussion of the breakdown process of a top-quality pig from Autumn Olive Farms, raised in Waynesboro. Modest offerings of charcuterie and small bites as well as beer and cider are provided. Participants are welcome to shop the cases after the class is over; we extend a 15% discount off all meats (no dry goods nor booze). Please arrive 10 minutes early (at 5:50pm) and bring your order confirmation number, or be able to pull up your confirmation email upon arrival. Classes will begin promptly at 6:00pm (we will not delay for stragglers). Parking on the street may be hit or miss, so please allow a few minutes to find a suitable place to park if you're driving. For safety and time-sensitive reasons, classes are not hands on. All demonstrations are non-refundable and non-postponable.
