In our opinion, a whole-animal butcher shop is the best way to see these goals through. By processing entire animals in house, we are able to have more control to refine what our farmers have already worked so hard to produce. And when we place it in a customers’ hands, we can offer complete information on not only the item’s origin, but how best to prepare it.
